Byron & Benji recently stopped by at SIRHA in Lyon, one of the world's leading hospitality and food service fairs. With over 3,000 exhibitors across every food service sector, it was an amazing platform for networking and exploring new developments in the industry. It was particularly interesting to see the high level of buzz around wagyu, ethical farm-to-plate meat production, and dry-aging specialisation.
